Instructions

  1. Prep Vegetables: Peel and chop potatoes and carrots. Keep peeled potatoes in water to prevent browning. Roughly chop garlic, green peppers, and tomatoes for blending.
  2. Blend Tomato Mixture: Blend the roughly chopped garlic, green peppers, and tomatoes to make a smooth tomato mixture. Adjust the quantity as needed and store any leftovers in the fridge.
  3. Cooking Process: Start by heating a pot on high heat. Unlike traditional methods, add the tomato mixture first into the pot, followed by the rest of the ingredients including onions, oil, salt, turmeric, minced garlic and ginger, carrots, potatoes, and the homemade timatim deleh. Add water as needed during cooking.
  4. Simmer: After adding all ingredients, let the mixture simmer until the vegetables are tender and the flavors meld together beautifully. Adjust seasoning to taste.
