  3. black pepper - to taste
  4. white pepper - to taste
  5. paprika - to taste
  6. chipotle chili powder - to taste (can substitute with another type of ground chili)
  7. garlic powder - to taste (without salt)
  8. onion powder - to taste (without salt)
  9. dried oregano - to taste (finely broken up)
  10. cooking oil - a little
  11. butter - 1 tablespoon
  12. parsley - to garnish (chopped)
  13. cilantro - to garnish (chopped)

  15. lemon - to taste (for serving)

Instructions

  1. Prepare the Tilapia: Rinse the tilapia fillets with water and dry them well with absorbent paper towels. Cut them in half for easier handling.
  2. Season the Fillets: Season the fish generously with salt, black pepper, white pepper, paprika, chipotle chili powder, garlic powder, onion powder, and dried oregano. Press the seasoning onto both sides of the fish.
  3. Cook the Fillets: In a frying pan with a little hot oil, melt a tablespoon of butter. Add the fish to the pan, fat side down. Cook over medium heat for 4 minutes on each side until browned.
  4. Garnish and Serve: Decorate the fillets with chopped parsley and cilantro. Serve with warm corn tortillas, a splash of lemon, and avocado green salsa.
