Ingredients

  1. mustard oil - 2-3 tbsp (2-3 tbsp)
  2. bay leaf - 1 (1 no.)
  3. green cardamom - 2 (2 no.)
  4. black cardamom - 1 (1 no.)
  5. cumin seeds - 1 tsp (1 tsp)
  6. onion - 2 (2 large, diced)
  7. prepared curd mixture - watch the video to see
  8. green chillies - 2-3 (2-3 no., less spicy & broken into half)
  9. tender coriander stems with roots - 1 tbsp (1 tbsp, finely chopped)
  10. salt - to taste (to taste)
  11. paneer - 500 gms (500 gms, cubed)
  12. water - 1 ½ cups (1 ½ cups)
  13. tomatoes - 2 (2 medium, diced)
  14. jaggery - 1 tbsp (1 tbsp, chopped)
  15. curd - 1 ½ cup (1 ½ cup, beaten)
  16. ginger garlic paste - 1 tbsp (1 tbsp)
  17. degi red chilli powder - 1 heaped tsp (1 heaped tsp)
  18. turmeric powder - ½ tsp (½ tsp)
  19. coriander powder - 1 tbsp (1 tbsp)
  20. cumin powder - ¼ tsp (¼ tsp)

Instructions

  1. Prepare Curd Mixture: In a bowl, mix curd, ginger garlic paste, degi red chili powder, turmeric powder, coriander powder, and cumin powder. Set aside.
  2. Cook Spices: In a handi or kadai, heat mustard oil until smoky, then add bay leaf, green cardamom, black cardamom, and cumin seeds. Let them splutter.
  3. Sauté Onions: Add diced onions and cook until translucent.
  4. Add Curd Mixture and Other Ingredients: Add the prepared curd mixture, green chillies, tender coriander stems, and salt. Cook for 5-6 minutes on medium flame.
  5. Add Paneer and Simmer: Add paneer cubes, water, and diced tomatoes. Let it simmer.
  6. Finish with Jaggery: Finish by adding jaggery and mix well.
  7. Garnish and Serve: Transfer to a serving dish, garnish with coriander sprig, and serve hot with roti or naan.
