Ingredients

  1. neutral oil - 1.5 cups (good quality)
  2. garlic - 1 head (whole head)
  3. raw peanuts - 2 oz (for frying)
  4. dried chilies - watch the video to see (variety, deseeded and stemmed)
  5. sesame seeds - 2 tbsp (for toasting)
  6. pumpkin seeds - 1 tbsp (for toasting)
  7. water - 1/4 cup (to add after toasting)
  8. vinegar - 2 tbsp (your favorite type)
  9. Mexican oregano - watch the video to see (to taste)
  10. salt - watch the video to see (to taste)

Instructions

  1. Heat Oil: In a fancy pot, heat 1.5 cups of neutral oil.
  2. Prep Garlic: Peel a whole head of garlic.
  3. Fry Garlic and Peanuts: Add garlic and 2 oz of raw peanuts to the oil and simmer for 5 to 10 minutes.
  4. Prepare Dried Chilies: Deseed and stem a variety of dried chilies, then break them into 1/2 inch pieces.
  5. Add Chilies and Seeds: After 10 minutes, add the dried chilies, 2 tbsp of sesame seeds, and 1 tbsp of pumpkin seeds to the oil.
  6. Toast Ingredients: Toast for 2 minutes.
  7. Add Water and Vinegar: Add 1/4 cup of water and 2 tbsp of vinegar, then let it cool completely.
  8. Season: Add Mexican oregano and salt to taste.
