Ingredients

  1. Chicken wings - 1kg
  2. Onions - 250g (sliced)
  3. Carrots - 200g (sliced)
  4. Parsnips - 100g (sliced)
  5. Garlic bulb - 1
  6. white wine - 200ml
  7. port - 200ml
  8. chicken stock - 1 litre
  9. Thyme springs - 3
  10. Rosemary springs - 3

  12. Slurry - watch the video to see ((1 tbsp flour; 2 tbsp stock/water))
  13. Dijon Mustard - 20g
  14. salt - 5g
  15. Cabernet Sauvignon - watch the video to see (to taste)

Instructions

  1. Roast chicken wings: Roast chicken wings in the oven until golden.
  2. Prepare vegetables: Slice onions, carrots, and parsnips. Roast with garlic and herbs until caramelized.
  3. Deglaze pan: Deglaze the pan with white wine and port, then add chicken stock.
  4. Simmer and strain: Simmer the gravy, then strain. Finish with Dijon mustard, a touch of vinegar, and adjust seasoning as needed.
