Ingredients

  1. prime rib roast - 3.6 lb
  2. Worcestershire sauce - watch the video to see (for dousing)
  3. rosemary salt - watch the video to see (recipe below)
  4. black pepper - to taste

Instructions

  1. Season and Dry Brine: Season the prime rib with Worcestershire sauce, rosemary salt, and black pepper. Dry brine in the fridge overnight or up to 24 hours.
  2. Initial Roasting: Roast in the oven at 200°F (93°C) until it hits an internal temperature of 105°F (40°C).
  3. Final Roasting: Remove the roast from the oven, increase the oven temperature to 450°F (230°C), and bake the rib roast until it hits an internal temperature between 115-120°F (46-48°C), about 12-15 minutes.
  4. Rest Before Serving: Rest for 20-25 minutes before slicing and serving.
