  9. red wine - 50 g (50 grams)
  10. water - 200 g (200 grams)

Instructions

  1. Prepare the Pork Shank: Clean off the excess fat from the pork shank.
  2. Brown the Shank: Heat oil in a saucepan and brown the shank.
  3. Season and Add Wine: Season with salt and pepper, then blend with red wine and let the alcohol evaporate.
  4. Add Water and Herbs: Add water along with sage, bay leaves, rosemary, and garlic. Cover and cook for 30 minutes.
  5. Prepare the Potatoes: Cut the potatoes into regular sizes and transfer them onto a baking tray.
  6. Combine and Bake: Place the shank on top of the potatoes with the cooking liquid and bake in a static oven at 200°C for about an hour.
  7. Check Temperature: Ensure the internal temperature of the shank is between 75°C and 85°C.
