Ingredients

  1. spring onions - 2 (finely sliced, greens and whites separated)
  2. ginger - 1 piece (thumb-sized piece, finely grated)
  3. garlic cloves - 3 large (finely grated)
  4. raw prawns - 350g (12 oz) (peeled, deveined, and finely diced)
  5. pork mince - 500g (1 lb)
  6. five-spice powder - ½ tsp
  7. cornflour (cornstarch) - 1 tbsp
  8. soy sauce - 1 tbsp
  9. Shaoxing cooking wine - 1 tbsp
  10. wonton wrappers - 1 packet
  11. crushed chilli - 1 tsp
  12. Korean chilli flakes - 1 tsp
  13. ground cumin - ½ tsp
  14. sesame seeds - 1 tbsp
  15. crushed peanuts - 2 tbsp
  16. sugar - ½ tsp
  17. peanut oil - 100ml (3½ fl oz)
  18. peanut butter - 2 tbsp

Instructions

  1. Prepare the filling: Combine the prawns, pork mince, ginger, garlic, spring onion whites, cornflour, soy sauce, five-spice powder, and Shaoxing wine in a large bowl. Mix well until thoroughly combined.
  2. Make the wontons: Take a wonton wrapper, place about a tablespoon of filling in the centre. Wet two edges of the wrapper with water, fold in half to form a triangle, then bring the two bottom points together, pressing to seal. Repeat until all filling is used.
  3. Prepare the chilli peanut sauce: Add crushed chilli, Korean chilli flakes, cumin, sesame seeds, crushed peanuts, and sugar to a bowl. Heat peanut oil until smoking slightly, pour over the ingredients, stir, then mix in peanut butter and spring onion greens.
  4. Cook the wontons: Bring a pot of water to a boil. Add wontons and cook for 4-5 minutes, or until they float. This indicates they are done.
  5. Serve: Spread chilli peanut sauce on a plate, place 8-10 wontons on top. Serve immediately.
