  2. salt - to taste (for curing)
  3. garlic - 1 clove (lightly fried)
  4. dried guajillo chile - 1 (lightly fried)
  5. dried pasilla chile - 1 (lightly fried)
  6. peanuts - 1/4 cup (lightly fried)
  7. sesame seeds - 2 tablespoons (lightly fried)
  8. oil - 1/2 cup (for blending)
  9. mayonnaise - 1/4 cup (for sandwich spread)
  10. purple cabbage - 1 cup (for crunch)
  11. lime - 1 (for zest)
  12. cilantro - 1/4 cup (for garnish)
  13. bread - 2 slices (for sandwich)

Instructions

  1. Cure Nopal: Cure the trimmed nopal cactus in salt for 1 to 12 hours.
  2. Prepare Salsa Matcha: Lightly fry garlic, guajillo and pasilla chiles, peanuts, and sesame seeds in oil.
  3. Blend Salsa: Blend the fried ingredients with the oil to create a salsa matcha.
  4. Mix Spread: Combine the salsa matcha with mayonnaise to create a sandwich spread.
  5. Prepare Cabbage: Shred purple cabbage and mix with lime and cilantro.
  6. Bread and Fry Nopal: Bread and fry the cured nopal cactus like a protein.
  7. Assemble Sandwich: Spread the mayo mixture on the bread, add fried nopal, cabbage mixture, and top with another slice of bread.
