Ingredients

  1. chicken thigh fillet - 500 g (500 grams, can substitute with breast fillet)
  2. garlic - 3 cloves (3 cloves, grated for marinade)
  3. lime juice - 2 slices (from 2 slices of lime)
  4. tapioca flour - 4 tbsp (4 tablespoons)
  5. turmeric powder - 1 tsp (1 teaspoon, optional)
  6. egg white - 1 (1 egg white for marinating)
  7. salt - 1 tsp (1 teaspoon)
  8. chicken stock powder - 1 tsp (1 teaspoon)
  9. granulated sugar - 1 tsp (1 teaspoon)
  10. black pepper - 1/2 tsp (1/2 teaspoon)
  11. oil - 1 tbsp (1 tablespoon for cooking, optional)
  12. garlic - 2 cloves (2 cloves for sambal)
  13. red bird's eye chili - 35 g (35 grams for sambal)
  14. salt - 1/2 tsp (1/2 teaspoon for sambal)
  15. MSG - 1/4 tsp (1/4 teaspoon, optional for sambal)

Instructions

  1. Marinate Chicken: Mix lime juice, grated garlic, salt, chicken stock powder, sugar, black pepper, turmeric powder, tapioca flour, and egg white. Coat chicken fillets evenly and marinate for at least 1 hour, or refrigerate overnight.
  2. Cook Chicken: Heat a little oil in a pan over low heat. Cook the marinated chicken on all sides until golden brown and fully cooked. If the inside is still raw, cut into pieces and cook again.
  3. Prepare Sambal: Using the same pan, sauté garlic and red bird's eye chili briefly until fragrant but not fully cooked. Transfer to a mortar and pestle.
  4. Make Sambal and Combine: Add salt and optional MSG to the mortar, roughly pound the mixture. Add the cooked chicken and smash together to combine flavors.
  5. Serve: Serve the non-fried geprek chicken with white rice, lime wedges, and head lettuce.
