Ingredients

  1. onion - 1 large (large, cut into very thin slices)
  2. celery sticks - 2 sticks (cut into thin rings)
  3. potatoes - watch the video to see (cut into thin rings)
  4. garlic - 1 head (whole head)
  5. red pepper - watch the video to see (hot and cold varieties)
  6. cumin - 1 spoon (ground)
  7. dried coriander - 1 spoon (ground)
  8. salt - 1 tablespoon (large spoon)
  9. vinegar - 1/4 teaspoon (quarter spoon)
  10. harissa - 1 tablespoon (large spoon)
  11. lemon juice - 1/4 teaspoon (quarter spoon)
  12. oil - watch the video to see (to brush on fish)
  13. fish - 1 whole fish (cleaned and dried, any type preferred, local fish used)

Instructions

  1. Prepare vegetables: Cut the large onion into very thin slices. Cut the celery sticks into thin rings. Slice the potatoes into thin rings as well to ensure quick cooking.
  2. Make the marinade: In a food processor, blend together garlic head, hot and cold red peppers, cumin, dried coriander, salt, vinegar, harissa, and lemon juice until smooth.
  3. Mix marinade with vegetables: Take a portion of the marinade and mix it thoroughly with the sliced celery, onion, and potatoes.
  4. Prepare the fish: Wash and clean the fish well, then dry it. Make small holes in the fish to allow the marinade to penetrate deeply.
  5. Marinate the fish: Distribute the marinade inside and outside the fish, ensuring it is well coated.
  6. Arrange for grilling: Place the marinated vegetables and potatoes in a tray, then place the fish on top. Brush the fish with a little oil.
  7. Grill the fish: Preheat the oven or gas oven to the highest temperature. Grill the fish until it takes on a beautiful color and is cooked through.
  8. Serve: Serve the grilled fish with the cooked vegetables and potatoes underneath. Optionally prepare Sayadeya rice as a side.
