  1. Mutton mix boti - 750 g (cubed mutton pieces)
  2. Dahi (Yogurt) - 1 cup (whisked)
  3. Hari mirch (Green chilli) paste - 1.5 tbsp
  4. Adrak lehsan paste (Ginger garlic paste) - 1 tbsp
  5. Dhania powder (Coriander powder) - 1 tbsp
  6. Himalayan pink salt - 1 tsp (or to taste)
  7. Kali mirch (Black pepper) crushed - 1.5 tsp
  8. Javitri powder (Mace powder) - 0.25 tsp
  9. Ajwain (Carom seeds) - 1 pinch
  10. Garam masala powder - 1 tsp
  11. Zeera powder (Cumin powder) - 0.5 tbsp
  12. Jaifil powder (Nutmeg powder) - 0.25 tsp
  13. Lemon juice - 2 tbsp
  14. Ghee (Clarified butter) - 0.5 cup
  15. Pyaz (Onion) - 2 medium (sliced)
  16. Badiyan ka phool (Star anise) - 2 pieces
  17. Sabut kali mirch (Black peppercorns) - 0.25 tsp
  18. Darchini (Cinnamon sticks) - 2 sticks
  19. Hari elaichi (Green cardamom) - 4-5 pods
  20. Badi elaichi (Black cardamom) - 1 pod
  21. Zeera (Cumin seeds) - 1 tsp
  22. Laung (Cloves) - 3-4 pieces

  28. Chawal (Rice) sella - 500 g (soaked and boiled until 90% done)

  33. Ghee (Clarified butter) - 2 tbsp (melted)
  34. Hari mirch (Green chillies) - 2 pieces

Instructions

  1. Marinate Mutton: In a bowl, combine mutton, yogurt, green chilli paste, ginger garlic paste, coriander powder, pink salt, crushed black pepper, mace powder, carom seeds, garam masala powder, cumin powder, nutmeg powder, and lemon juice. Mix well, cover, and marinate for 30 minutes.
  2. Prepare Base: In a cooking pot, melt clarified butter (ghee). Add sliced onions and fry on medium flame until golden brown.
  3. Add Whole Spices: Add star anise, black peppercorns, cinnamon sticks, green cardamom, black cardamom, cumin seeds, and cloves to the pot. Mix well.
  4. Cook Mutton: Add sliced tomato and marinated mutton to the pot. Mix well, cover, and cook on low flame until the mutton is tender (approximately 40-45 minutes). Then cook on high flame for 1-2 minutes.
  5. Layer and Steam Cook: Add fresh coriander, mint leaves, sliced tomato, green chillies, boiled rice (90% cooked), crushed black pepper, kewra water, additional mint leaves, orange food color, melted ghee, and green chillies. Cover with a kitchen cloth and lid, then steam cook on low flame for 10-15 minutes.
  6. Serve: Serve hot.
