Prepare ingredients: Thinly slice the green onions. Grate or mash the garlic.
Make dough: In a large bowl, crumble the tofu. Add grated garlic, salt, pepper, chicken powder, all-purpose flour, and tapioca flour. Mix evenly.
Add green onions: Add the sliced green onions to the dough and mix well. Check the consistency to ensure it is not too dry.
Shape Cireng: Pinch off small pieces of dough and shape them flat and small. Irregular shapes are fine.
Coat and fry: Optionally coat the shaped dough pieces with tapioca flour for extra crunch. Heat oil to medium heat and fry the Cireng until cooked and slightly yellowed, about 3-5 minutes per batch. Avoid high heat to prevent burning and popping.
Alternative air fryer method: Place shaped dough pieces in an air fryer basket, spray or brush with oil, and bake at 180°C for 12-15 minutes without tapioca coating.
Make Sweet Soy Sambal: Slice red Thai chilies. In a bowl, combine sliced chilies, sweet soy sauce (kecap manis), fried shallots, and kaffir lime juice. Adjust seasoning with salt or fish sauce if desired.
Serve: Serve the crispy and chewy Mini Tofu Cireng with the Sweet Soy Sambal and optionally green Thai chilies.
