Ingredients

  1. large potatoes - 2 (washed, unpeeled, boiled)
  2. water - enough to boil potatoes (to soak and boil potatoes)
  3. salt - watch the video to see (added to boiling water and for seasoning)
  4. garlic cloves - few cloves (about 4-6) (sliced and fried in olive oil)
  5. olive oil - 1/2 cup (for frying garlic and potatoes)
  6. paprika - 1 tablespoon (added to garlic oil)
  7. oregano - 1/4 tablespoon (added to garlic oil)
  8. curry powder - 1/4 tablespoon (added to garlic oil)
  9. hot pepper seeds - a little bit (added to garlic oil for heat)
  10. sesame seeds - 3 tablespoons (toasted in garlic oil with spices)
  11. fresh parsley - watch the video to see (chopped for garnish)

Instructions

  1. Prepare Potatoes: Wash two large potatoes thoroughly without peeling. Soak them in water to remove dirt and sand. Place the potatoes in a pot with water, add a little salt to prevent the skin from falling off, and boil on medium heat for about 45 minutes until fully cooked but firm.
  2. Slice Potatoes: Remove the boiled potatoes from water and let them cool slightly. Peel the potatoes and slice them to about medium thickness.
  3. Prepare Garlic and Spice Oil: In a frying pan, add about half a cup of olive oil and sliced garlic cloves. Heat on medium and fry the garlic until it turns blonde and soft. Mash the garlic cloves in the oil to release flavor.
  4. Add Spices and Sesame Seeds: Add 1 tablespoon paprika, 1/4 tablespoon oregano, 1/4 tablespoon curry powder, a little hot pepper seeds, and 3 tablespoons sesame seeds to the garlic oil. Stir well and cook on low heat until fragrant.
  5. Combine Potatoes with Spiced Oil: Add the sliced potatoes to the pan with the spiced garlic oil. Sprinkle a small pinch of salt over the potatoes. Cook on low heat, turning the potatoes occasionally to allow them to absorb the flavors and develop a light browning for about 3-5 minutes.
  6. Finish and Garnish: Once the potatoes have browned and absorbed the flavors, turn off the heat. Sprinkle chopped fresh parsley over the potatoes for added flavor and presentation. Serve warm.
