Prepare Limes: Peel all eight limes, ensuring no pulp or minimal white pith remains. Scrape out any pulp if necessary.
Mix Acids: In a bowl, add 44g of citric acid and 8g of malic acid. Lightly muddle the lime peels in the acids to release some oils. Let this mixture sit for 2 hours.
Juice Limes: Blend the peeled limes to extract the juice. Strain out all the pulp.
Combine and Blend: Add the lime juice and four cups of water to the acid and peel mixture. Blend well using an immersion blender.
Strain and Bottle: Strain the mixture to remove any remaining solids, then bottle the liquid.
