Ingredients

  1. intestines - 1 kilogram (cleaned and prepared as per instructions)
  2. salt - 0.5 cup (for initial cleaning)
  3. baking soda - 2 tablespoons (for cleaning)
  4. vinegar - 1 cup (for cleaning)
  5. corn flour - 1 cup (used as scrub and odor absorber)
  6. coarse salt - 0.5 cup (used with corn flour for scrubbing)

  9. tomatoes - 1.5 kilograms (finely chopped and seasoned for stuffing)
  10. hot peppers - 2 (finely chopped, added to stuffing)
  11. onions - 3 (rubbed with salt, pepper, and spices for stuffing)
  12. fresh herbs (dill, coriander, parsley) - 3 bunches (chopped for stuffing)
  13. olive oil - 1 cup (added to stuffing for smoothness)

Instructions

  1. Clean the Intestines: Remove excess fat from the outside of the intestines, peeling gently without cutting. Turn intestines inside out using the back of a spoon or fork to clean the inner side.
  2. Soak Intestines in Cleaning Solution: Place intestines in a mixture of half a cup salt, two tablespoons baking soda, and one cup vinegar. Let it foam and soak for 15 minutes.
  3. Remove Mucous Substance: Use the tube skin method by stepping on and pulling the intestines to remove the mucous substance inside. Repeat once or twice until intestines are creamy white and clean.
  4. Scrub with Corn Flour and Salt: Add one cup corn flour and half a cup coarse salt to intestines and scrub well to remove any remaining impurities and odors. Rinse thoroughly multiple times until clean.
  5. Final Rinse and Lemon Soak: Rinse intestines well, then soak in clean water with lemon juice and lemon peel for 10-15 minutes to add fragrance and remove any remaining smell. Rinse and drain.
  6. Prepare Stuffing: Rub onions with salt, pepper, and spices. Mix with finely chopped tomatoes, hot peppers, washed rice, chopped fresh herbs (dill, coriander, parsley), and olive oil. Mix well.
  7. Stuff the Intestines: Using fingers, gently push the stuffing into the intestines, leaving the ends empty to allow closing during boiling.
  8. Boil the Stuffed Intestines: Boil water with tomatoes, onions, cinnamon stick, bay leaves, mastic, cardamom, black pepper, sugar, and salt. Add stuffed intestines, let them sink and boil. Reduce heat and simmer for 1 hour and 15 minutes.
  9. Prepare Seasoning Mix: Mix coriander, cumin, black pepper, hot pepper, smoked paprika, and salt to create a flavorful marinade.
  10. Fry the Cooked Intestines: Heat oil over medium heat and fry the boiled stuffed intestines slowly until crispy. Drain on a strainer to keep shape.
  11. Garnish and Serve: Sprinkle chopped parsley and coriander over the hot fried intestines, then sprinkle the prepared seasoning mix for enhanced flavor.
