  6. salt - watch the video to see (to taste)
  7. onion - 1 (small, grated)
  8. parsley - 2 tablespoons (chopped)
  9. water - 1 cup (for forming kofta)
  10. large onion - 1 (sliced)
  11. vegetable oil - 3 tablespoons (for frying)
  12. sumac - 1 tablespoon (for acidity)
  13. pomegranate molasses - 3-4 tablespoons (for flavor)
  14. lemon juice - 1/2 (from half a lemon)

Instructions

  1. Prepare Meat Mixture: Combine minced meat with spices, grated onion, and chopped parsley. Knead to mix well.
  2. Form Kofta: Use water to form the meat mixture into finger shapes and place on a tray. Refrigerate.
  3. Caramelize Onions: In a frying pan, heat vegetable oil and add sliced onions with a pinch of salt. Cook on medium heat until caramelized.
  4. Fry Kofta: In a separate pan, heat vegetable oil and fry the kofta until cooked through, turning occasionally.
  5. Combine and Serve: Add caramelized onions to the kofta, mix in chopped parsley, pomegranate molasses, and lemon juice. Cook for an additional 5 minutes.
