  2. yogurt (dahi) - 1.5 cup (whisked)
  3. green chili paste (hari mirch paste) - 2 tbsp
  4. ginger garlic paste (adrak lehsan paste) - 1 tbsp
  5. turmeric powder (haldi powder) - 0.5 tsp
  6. Himalayan pink salt - 1.5 tsp or to taste
  7. citric acid (tatri) - 0.25 tsp
  8. gram flour (baisan) - 0.5 cup
  9. cooking oil - 2 tbsp (for gram flour mixture)
  10. cumin seeds (zeera) - 0.5 tbsp
  11. curry leaves (curry patta) - 10-12 leaves
  12. water - 1 litre (for cooking gram flour mixture)
  13. cooking oil - 0.5 cup (for beef curry)
  14. cumin seeds (zeera) - 1 tsp
  15. onion (pyaz) - 400 g (sliced)
  16. tomato puree - 1 cup
  17. coriander powder (dhania powder) - 3 tsp
  18. turmeric powder (haldi powder) - 0.25 tsp
  19. red chili powder (lal mirch powder) - 2 tsp or to taste
  20. garam masala powder - 1 tsp
  21. Himalayan pink salt - 1 tsp or to taste
  22. ginger garlic paste (adrak lehsan paste) - 1.5 tbsp
  23. boneless beef cubes - 650 g
  24. water - 0.5 cup or as required (for beef curry)
  25. fresh coriander (hara dhania) - 2 tbsp (chopped)

Instructions

  1. Prepare gram flour mixture: In a jug, add water (0.5 litre), yogurt, green chili paste, ginger garlic paste, turmeric powder, Himalayan pink salt, citric acid, and gram flour. Whisk well and set aside.
  2. Cook gram flour mixture: In a pot, heat 2 tbsp cooking oil, add cumin seeds and curry leaves, mix well. Add the gram flour mixture and 1 litre water, mix well and bring to a boil. Stir occasionally, cover partially and cook on low flame for 1 hour, stirring intermittently.
  3. Prepare beef curry base: In a wok, heat 0.5 cup cooking oil, add cumin seeds and sliced onions, cook until light golden.
  4. Add spices and tomato puree: Add tomato puree, coriander powder, turmeric powder, red chili powder, garam masala powder, Himalayan pink salt, and ginger garlic paste. Mix well and cook on medium flame until oil separates.
  5. Cook beef: Add boneless beef cubes, mix well and cook on medium flame for 4-5 minutes.
  6. Simmer beef: Add 0.5 cup water or as required, mix well, cover and cook on low flame until beef is tender (30-40 minutes). Then cook on high flame until oil separates.
  7. Finish beef curry: Add chopped fresh coriander and mix well.
  8. Assemble and serve: On a serving plate, add boiled spaghetti, prepared gram flour curry, beef curry, chips, fried garlic, fried onion, fresh coriander, lemon juice, chaat masala, and lemon wedges. Serve immediately.
