Ingredients

  2. MAC Magic dry yeast - 9 g (9 g)
  3. brown sugar - 2 tablespoons
  4. hard flour - 500 g
  5. seed oil - 1 teaspoon (for greasing the bowl)
  6. salt - 1 teaspoon
  7. water - 1.5 L (for boiling)
  8. baking soda - 1 tablespoon
  9. egg white - 1 (from a medium egg)
  10. sesame seeds - 50 g
  11. black sesame seeds - 50 g
  12. poppy seeds - 50 g
  13. cream cheese - to taste (for serving)
  14. smoked salmon - to taste (for serving)
  15. chopped dill - to taste (for serving)
  16. arugula - to taste (for serving)
  17. freshly ground pepper - to taste (for serving)
  18. balsamic cream - to taste (mesiko Panyropoulos, for serving)

Instructions

  1. Prepare the dough: In a mixer, combine water, yeast, and sugar. Mix until dissolved, then add flour and salt. Mix for 5-6 minutes.
  2. Let the dough rise: Transfer the dough to an oiled bowl, cover, and let it rise until doubled in size, about 1 hour.
  3. Shape the bagels: Divide the dough into 10 pieces, shape into balls, then form bagels by making a hole in the center of each ball.
  4. Boil the bagels: Boil water with baking soda. Boil each bagel for 30 seconds on each side, then transfer to a baking sheet.
  5. Bake the bagels: Brush each bagel with egg white, sprinkle with seeds, and bake at 180°C for 20-25 minutes until golden.
  6. Serve: Slice bagels and fill with cream cheese, smoked salmon, dill, arugula, pepper, and balsamic cream.
