Instructions
Prepare Tuna Salad: In a bowl, add diced bell peppers, shredded lettuce, canned tuna chunks, soya mayonnaise, salt, and black pepper. Mix everything together to combine.
Whisk Eggs: In a separate bowl, crack open two eggs and season with some salt and pepper. Whisk thoroughly.
Cook Eggs: On the stove top, add some butter to a pan that's already heating up on medium heat. When the butter is all melted, add the whisked eggs and leave to set on all sides.
Assemble Wrap: Place a tortilla wrap over the set eggs. Flip it over to reveal the set eggs. Place the tuna salad filling on one side of the wrap and a cheese slice on the other side. Fold to cover the wrap.
Serve: Take the wrap off the heat immediately. Serve with an iced cold coffee with some plant-based milk and a vitamin C supplement for a complete meal.
