Ingredients

  1. egg yolks - 5
  2. sugar - 1/2 cup (plus more for caramelizing on top)
  3. cornstarch - 2 tbsp
  4. water - 2 tbsp (for cornstarch slurry)
  5. whole milk - 2 1/2 cups
  6. orange peel - to taste
  7. cinnamon sticks - 2

Instructions

  1. Prepare Egg Mixture: Whisk together 5 egg yolks and 1/2 cup of sugar until pale.
  2. Make Cornstarch Slurry: Mix 2 tbsp of cornstarch with 2 tbsp of water. Set aside.
  3. Infuse Milk: In a pot, heat 2 1/2 cups of whole milk with orange peel and two cinnamon sticks until simmering, then remove from heat.
  4. Temper Eggs: Gradually mix a small amount of the hot milk into the egg mixture to temper, then combine everything back into the pot.
  5. Cook Custard: Cook the mixture on low heat until it thickens into a pudding, stirring continuously.
  6. Chill: Pour the custard into dishes and chill overnight.
  7. Caramelize Sugar: Sprinkle sugar on top of the chilled custard and caramelize with a torch at an angle.
