Ingredients

  1. goat leg and shoulder - 2 kg (cut into portions)
  2. strained yogurt - 500 g (for the yogurt crust)
  3. olive oil - 50 g (for marinating goat and potatoes)
  4. chicken cubes - 2 (KNR brand)
  5. onions - 2 (cut into pieces)
  6. spring onions - 6 (cut into pieces)
  7. dill - 1/2 bunch (half a bunch, chopped)
  8. garlic - 2 cloves (chopped)
  9. egg yolks - 2 (from medium eggs)
  10. water - 600 g (for yogurt mixture and potatoes)
  11. cornflour - 2 tablespoons (for thickening yogurt mixture)
  12. cumin - 1 teaspoon (for flavoring)
  13. potatoes - 1.5 kg (for baking)
  14. mustard - 80 g (for flavoring potatoes)
  15. dried oregano - 1 tablespoon (for flavoring potatoes)
  16. lemon - 1 (juice of one)
  17. butter - 4 to 5 teaspoons (for flavoring potatoes)

Instructions

  1. Marinate the Goat: Mix 50 g of olive oil with 2 chicken cubes in a food processor and pour over the goat pieces. Mix well.
  2. Sauté the Goat: Transfer the marinated goat to a hot pan and sauté on all sides until golden.
  3. Prepare Aromatics: In a baking pan, add chopped onions, spring onions, dill, and garlic.
  4. Combine Goat and Aromatics: Place the sautéed goat on top of the aromatics in the baking pan.
  5. Prepare Yogurt Mixture: In a bowl, mix yogurt, cumin, egg yolks, water, and cornflour.
  6. Add Yogurt Mixture: Spoon the yogurt mixture over the goat in the baking pan.
  7. Cover and Bake: Cover with parchment paper and aluminum foil. Bake at 180°C for 2.5 hours, then uncover and bake for an additional 30 minutes.
  8. Prepare Potatoes: In a baking dish, mix potatoes with olive oil, salt, pepper, mustard, oregano, lemon juice, water, and butter.
  9. Bake Potatoes: Add the potatoes to the oven 45 minutes before the goat is done.
  10. Serve: Once both dishes are cooked, serve the goat with the baked potatoes.
