duck fat - 1 spoonful (for cooking the steak)

Instructions
Prepare the bread: Cut the bread in half and toast it in the oven until ready.
Cook the steak: Heat the pan to 300°C (full heat). Add a spoonful of duck fat. Place the thinly sliced flank steak in the pan and cook quickly. Season with pepper and add cognac during cooking.
Melt the cheese: Cover the cooked steak with cheese and let it melt quietly while the bread is toasting.
Prepare the sandwich: Spread the red sauce generously on the toasted bread. Place the steak with melted cheese on the bread. Add fried onions on top.
Serve: Cut the sandwich if desired and serve immediately while the meat is still pink and juicy.
