Ingredients

  2. ripe plantains - watch the video to see (moderately ripe, not overripe)
  3. onion - watch the video to see (blended)
  4. garlic - watch the video to see (blended)
  5. ginger - watch the video to see (blended)
  6. n powder - watch the video to see
  7. curry powder - watch the video to see
  8. salt - to taste
  9. water - 1 cup
  10. bell pepper - watch the video to see (traffic light colors, for garnishing)
  11. hot pepper - watch the video to see (preferably habanero, adjust to taste)
  12. n chicken seasoning - watch the video to see

Instructions

  1. Prepare Gizzard: Clean the gizzard and transfer into a pressure cooker. Blend onion, garlic, and ginger and add to the cooker. Season with n powder, curry powder, and salt. Add 1 cup of water and mix everything. Cook until tender, using a pressure cooker for speed or a normal pot for 1 to 1.5 hours.
  2. Prepare Plantains: Slice ripe plantains to the same size and shape, preferably with a slicer for uniformity. Season with salt.
  3. Fry Plantains: Deep fry or air fry the plantains until golden brown. Transfer to a sieve and set aside.
  4. Cut Gizzard: Once cooked, cut the gizzard into sizes matching the plantains using a cutter or knife.
  5. Fry Gizzard: Deep fry or air fry the gizzard pieces until crispy. Set aside.
  6. Prepare Sauce: Blend bell pepper, onion, and hot pepper. Pour into nonstick cookware and cook to reduce excess water.
  7. Garnish Preparation: Cut traffic light bell peppers for garnishing using a cutter to desired size.
  8. Combine Ingredients: Fry the bell pepper and onion mixture, season with n chicken seasoning. Add the garnishing peppers, then introduce the gizzard. Mix well.
  9. Final Mix: Gently mix in the fried plantains, being careful not to mash them. Serve as desired.
