Ingredients

  1. Basmati rice - 1 cup
  2. Brinjal - 3
  3. Urad dal - 1 tsp
  4. Chana dal - 1 tsp
  5. Pepper - 1 tsp
  6. Fenugreek seeds - ½ tsp
  7. Cinnamon stick - 1
  8. Cloves - 2
  9. Coconut powder - 2 tsp
  10. Mustard seeds - 1 tsp
  11. Cumin seeds - 1 tsp
  12. Onions - 1 cup
  13. Green chillies - 4
  14. Ghee - watch the video to see (as required)
  15. Salt - watch the video to see (to taste)

Instructions

  1. Prepare Spice Mix: Dry roast pepper, fenugreek seeds, cinnamon, cloves, and coconut powder. Blend into a fine powder.
  2. Cook Eggplant with Spices: In a pan, heat ghee, add mustard seeds, cumin seeds, urad dal, chana dal, onions, and brinjal. Cook until the eggplants are slightly cooked.
  3. Add Rice and Serve: Add the prepared spice mix and cooked basmati rice, mix well, and serve hot.
