  2. fresh yeast - 1-3 g (fresh yeast amount varies between 1 and 3 grams)
  3. water - 700 g (lukewarm water)
  4. salt - 25 g (fine salt)
  5. oil for frying - watch the video to see (enough to deep fry, heated to 180°C)
  6. arugula (rucola) - 100 g (fresh arugula leaves)
  7. stracciata di bufala (buffalo stracciatella cheese) - 500 g (fresh stracciatella cheese)
  8. cherry tomatoes - 400 g (fresh, halved or whole)
  9. prosciutto crudo - 500 g (thinly sliced cured ham)
  10. olive oil - 50 g (extra virgin olive oil for dressing)

Instructions

  1. Prepare the dough: In a mixer or large bowl, combine the flour, fresh yeast, water, and salt. Knead uniformly for about 20 minutes until smooth and elastic.
  2. Rest the dough: Let the dough rest on the work surface for 15 to 40 minutes.
  3. Shape the dough: Divide the dough into 200-gram portions and form small dough balls (panetti).
  4. Proof the dough: Allow the dough balls to rise until doubled in size (time depends on room temperature).
  5. Fry the dough: Stretch each dough ball gently without pressing too much. Heat oil to 180°C and deep fry the dough until golden and puffed.
  6. Assemble the sandwich: Cut the fried dough open and fill with prosciutto crudo, stracciatella cheese, arugula, and cherry tomatoes dressed with olive oil.
  7. Serve: Serve immediately while warm and enjoy.
