  5. mustard - 1 tablespoon (for bacon-aise sauce)

Instructions

  1. Bake the bacon: Bake bacon in the oven at 180 degrees Celsius for 14-18 minutes, turning the tray halfway if needed for even cooking.
  2. Prepare the bacon-aise sauce: Dice and fry additional bacon until crispy. Melt a pack of butter in the pan with the bacon, then strain the bacon pieces from the butter.
  3. Make the sauce base: Blend egg yolks, bearnaise essence, and mustard until creamy. Gradually add the warm bacon-infused butter while blending.
