Ingredients

  1. rice flour - 2 parts (regular, not glutinous)
  2. tapioca starch - 1 part (for chewiness)
  3. water - watch the video to see (add little by little)
  4. neutral oil - watch the video to see (for brushing the pan and noodles)

Instructions

  1. Make the Dough: Combine 2 parts rice flour and 1 part tapioca starch. Add water gradually until a soft dough forms.
  2. Knead the Dough: Knead the dough for about 5 minutes to hydrate the starch.
  3. Prepare Steamer: Set up a steamer with boiling water and prepare a non-stick or stainless steel pan.
  4. Oil the Pan: Brush the pan lightly with oil to prevent sticking.
  5. Pour the Batter: Whisk the batter before pouring it into the pan. Pour in the batter and jiggle to spread evenly.
  6. Steam the Noodles: Cover and steam for exactly 1 minute.
  7. Cool and Peel: Let the noodles cool completely before peeling them off the pan.
  8. Cut the Noodles: Cut the noodles into desired width, approximately 3/4 inch.
  9. Storage: Refrigerate or freeze the noodles as needed.
