Instructions

  1. Mix Flour and Butter: Incorporate the very soft butter into the all-purpose flour until there are no visible spots of butter. The texture should be similar to shortbread, very spreadable.
  2. Add Water: Gradually add warm water to the mixture, controlling the texture of the dough. The dough is ready when it's not too sticky or dry, and no flour remains on your hands or bowl.
  3. Knead the Dough: Knead the dough for about 10 minutes until it becomes smooth and elastic. It's ready when it bounces back after being pressed.
  4. Rest the Dough: Let the dough rest for 10 minutes covered with a towel to prevent drying.
  5. Shape and Cook: Divide the dough into even portions and roll out into tortillas. Cook on a medium-heated, lightly oiled cast iron griddle until each side has bubbles and is slightly dry.
