  8. lemon zest - 1 lemon (from 1 lemon)
  9. lemon juice - 1 lemon (from 1 lemon)
  10. thyme - 1 tablespoon (1 tablespoon finely chopped or 2 teaspoons dried)
  11. potatoes - 6 (6, cut into bite-sized pieces)
  12. bell pepper - 1 (1, cut into bite-sized pieces)
  13. chili - 1 (1, adjust to taste for spiciness)
  14. onions - 3 (3 large, cut into bite-sized pieces)
  15. garlic - 8 cloves (8 cloves)
  16. tomatoes - 200g (200g, whole or halved)
  17. chicken stock - 4 dl (4 dl)
  18. extra virgin olive oil - ½ dl (for garnish, ½ dl)
  19. salt - to taste (to taste)
  20. black pepper - to taste (to taste)

Instructions

  1. Prepare the Marinade: Mix yogurt, tomato paste, salt, black pepper, paprika, ½ dl extra virgin olive oil, lemon zest, lemon juice, and thyme together. Marinate the chicken in this mixture for at least 30 minutes, though overnight is recommended for best flavor.
  2. Prepare the Vegetable Garnish: Cut potatoes, bell pepper, chili, onions, and garlic into bite-sized pieces. Place them in an ovenproof dish.
  3. Combine Ingredients: Add tomatoes, chicken stock, ½ dl extra virgin olive oil, salt, and black pepper to the dish with the vegetables. Mix well.
  4. Add the Chicken: Place the marinated chicken pieces on top of the vegetable mixture.
  5. Bake: Bake in a preheated oven at 185°C (365°F) for 1 hour.
  6. Serve: Serve the dish with a fresh salad, yogurt, pickled vegetables, and bread if desired.
