Ingredients

  1. extra virgin olive oil - 2 dl (for sautéing and drizzle)
  2. potatoes - 200 g (diced)
  3. root vegetables - 200 g (your choice, diced)
  4. onions - 300 g (chopped)
  5. garlic - 5 cloves (minced)
  6. black pepper - 10 g (ground)
  7. tomato paste - 80 g
  8. bulgur - 1 dl
  9. rice - 1 dl (any type)
  10. red lentils - 2 dl
  11. water - 3 l
  12. salt - 35 g
  13. sugar - 10 g
  14. paprika - 30 g (for aromatic oil)
  15. dried mint - 14 g (or 1/2 bunch fresh mint, chopped for aromatic oil)

Instructions

  1. Prepare the Vegetables: Heat olive oil in a large pot and sauté onions, diced potatoes, and root vegetables until soft.
  2. Add Tomato Paste: Add tomato paste and stir well.
  3. Add Main Ingredients: Add garlic, lentils, bulgur, rice, black pepper, salt, and sugar to the pot.
  4. Cook the Soup: Pour in the water and bring the soup to a boil. Then, reduce the heat and simmer until the lentils and rice are fully cooked.
  5. Blend the Soup: Blend the soup to achieve a slightly porridge-like consistency.
  6. Prepare Aromatic Oil: In a small pan, heat some olive oil and sauté dried mint and paprika to make an aromatic oil.
  7. Finalize the Soup: Pour the aromatic oil into the soup and stir well.
  8. Serve: Serve the soup with fresh lemon juice squeezed on top and day-old bread on the side.
