  10. mayonnaise - 200 g (base for pickle mayonnaise)
  11. garlic powder - to taste (can also be minced garlic)
  12. lemon or lime - to taste
  13. pickled gherkin - 40 g (for pickle mayonnaise)
  14. honey - 1 teaspoon (for pickle mayonnaise)

  16. tomato extract - 1 tablespoon (for sauce)

Instructions

  1. Prepare and Clean Pork Cheek: Clean the pork cheek by removing excess fat and connective tissue.
  2. Sear the Meat: Sear the pork cheek in a hot pan with a little oil until browned to develop flavor.
  3. Cook with Vegetables and Water: Add the seared cheeks to a pot with onions, garlic, carrots, bay leaf, peppercorns, salt, and enough water to cover. Cook on low heat for at least four or five hours.
  4. Prepare Pickle Mayonnaise: Mix mayonnaise, garlic powder, lemon or lime juice, pickled gherkin, honey, and adjust taste with a bit more acidity if needed. Let it rest for 30 minutes to enhance flavors.
  5. Make the Sauce: Sauté onion, mushrooms, and garlic with a touch of jalapeño. Add red wine, let the alcohol evaporate, then add tomato extract and stock. Finish with butter.
  6. Assemble the Sandwich: Spread pickle mayonnaise on the bun, add shredded pork cheek, top with cheddar cheese, and finish with the sauce.
