Ingredients

  1. neutral oil - 1 tbsp (vegetable, canola, or peanut oil)
  2. thick pork sausages - 8 (preferably 8 thick sausages)
  3. sea salt - to taste (to taste)
  4. cracked pepper - to taste (to taste)
  5. brown onion - 1 (chopped)
  6. garlic cloves - 3 (chopped)
  7. carrot - 1 (peeled and chopped)
  8. green apples - 2 (cored and chopped into large chunks)
  9. water - 2 cups (500 ml) (for simmering)
  10. Japanese curry stock cubes - 92 g (such as Golden Curry Sauce Mix brand)
  11. steamed rice - watch the video to see (to serve)

Instructions

  1. Heat oil and brown sausages: Heat oil in a heavy-based frying pan on medium-high heat. Cook sausages for 5 minutes, turning occasionally, until browned all over.
  2. Cook onion and garlic: Add chopped onion and garlic to the pan and cook for 3 minutes until starting to soften.
  3. Add carrot: Add the chopped carrot and cook for a further 2 minutes, stirring occasionally.
  4. Add water and curry stock cubes: Stir in the water and curry stock cubes, bring to a simmer while stirring to dissolve the stock cubes.
  5. Simmer: Simmer the mixture for 5 minutes.
  6. Add apples and continue simmering: Add the chopped apples, stir to combine, and continue simmering for a further 5 minutes.
  7. Serve: Serve the curried sausages over steamed rice.
