green apples - 2 (cored and chopped into large chunks)
water - 2 cups (500 ml) (for simmering)
Japanese curry stock cubes - 92 g (such as Golden Curry Sauce Mix brand)

Instructions
Heat oil and brown sausages: Heat oil in a heavy-based frying pan on medium-high heat. Cook sausages for 5 minutes, turning occasionally, until browned all over.
Cook onion and garlic: Add chopped onion and garlic to the pan and cook for 3 minutes until starting to soften.
Add carrot: Add the chopped carrot and cook for a further 2 minutes, stirring occasionally.
Add water and curry stock cubes: Stir in the water and curry stock cubes, bring to a simmer while stirring to dissolve the stock cubes.
Simmer: Simmer the mixture for 5 minutes.
Add apples and continue simmering: Add the chopped apples, stir to combine, and continue simmering for a further 5 minutes.
Serve: Serve the curried sausages over steamed rice.
