Instructions

  3. Coat Wings: Toss the salted chicken wings in the combined starch and flour mixture to coat evenly.
  4. Prepare Green Pepper Sauce: Char 5-6 jalapenos, 1 poblano pepper, and 2 Italian frying peppers for about 5 minutes until deeply charred.
  5. Make Sauce Base: In a saucepan, combine 1/2 cup distilled water, 1/2 cup sushi rice vinegar, 1 tablespoon soy sauce, and 1 tablespoon fish sauce. Bring to a simmer.
  6. Blend Sauce: Strain out solids through a fine mesh sieve, then add a generous squeeze of wasabi paste and the charred peppers. Blend until smooth to create the green pepper wasabi sauce.
  7. Fry Chicken Wings: Fry the coated chicken wings for 5 to 8 minutes until golden brown and crisp.
  8. Make Buffalo Sauce: Mix Frank's Red Hot sauce and butter in a 2:1 ratio, adding some wasabi paste to taste.
  9. Toss Wings in Sauce: Toss the fried chicken wings in the green pepper wasabi buffalo sauce until well coated.
