Ingredients

  1. oil - to taste (a tiny bit)
  2. onion - 1/4 cup (diced)
  3. carrots - 1/4 cup (diced)
  4. green bell pepper - 1/4 cup (diced)
  5. red bell pepper - 1/4 cup (diced)
  6. yellow bell pepper - 1/4 cup (diced)
  7. sweet corn - 1/4 cup
  8. chicken seasoning cube - 1 cube (Canal brand or similar)
  9. salt - to taste (to taste)
  10. fresh pepper - to taste (for extra spice, optional)
  11. eggs - 3
  12. plantains - 2 (for grilling)

Instructions

  1. Prepare the Vegetables: Drizzle a tiny bit of oil in a pan. Add diced onions, carrots, green, red, and yellow bell peppers, and sweet corn. The more colorful, the better.
  2. Season the Vegetables: Season with a chicken seasoning cube and a sprinkle of salt. Add fresh pepper for extra spice, if desired. Stir fry for one minute, then remove from heat.
  3. Prepare the Egg Mixture: In a bowl, crack open the eggs and season lightly. Whisk well. Add half of the sautéed vegetable mixture and mix again to combine.
  4. Cook the Omelette: In the same pan, drizzle a tiny bit of oil. Pour in the egg mixture and cook to make a vegetable-packed omelette.
  5. Grill the Plantains: Grill plantains in an air fryer until golden and cooked through.
  6. Serve: Serve the omelette on a plate, accompanied by the grilled plantains and leftover sautéed vegetables.
