Instructions

  1. Make Croutons: Cube bread and place on baking tray. Add thinly sliced garlic, rosemary, thyme, olive oil, salt, and black pepper. Toss to coat. Bake in a 350°F (175°C) oven for 20-30 minutes until crispy.
  2. Prepare Caesar Dressing: Mince garlic and anchovy fillets. In a heavy glass bowl, combine minced anchovies, garlic, Dijon mustard, lemon juice, Worcestershire sauce, and egg yolks. Whisk while slowly drizzling in olive oil until emulsified and creamy. Stir in salt, pepper, and Parmesan cheese. Adjust seasoning to taste.
  3. Make Blackening Seasoning and Cook Chicken: Mix smoked paprika, cayenne, garlic powder, onion powder, dried thyme, black pepper, and kosher salt. Coat chicken breast with seasoning and a little oil. Sear in a cast iron or heavy pan over medium heat for 1-2 minutes per side. Transfer to a 400°F (205°C) oven and cook until internal temperature reaches 165°F (74°C), about 7-8 minutes.
  4. Assemble Salad: In a large stainless steel bowl, add a few spoonfuls of dressing and toss with washed Romaine lettuce. Add chopped bacon and more dressing if desired. Toss again gently. Plate salad, top with sliced blackened chicken breast, croutons, chopped parsley, and shaved Parmesan cheese.
