  5. Bacon - 10-12 strips (long streaky Canadian bacon, chopped)

  7. Chicken Stock - 1 cup (for making gravy)
  8. Butter - 1 tbsp (for beurre manié (thickening gravy))
  9. All Purpose Flour - 1 tbsp (for beurre manié (thickening gravy))
  10. Oil - 2 tsp (for cooking quail eggs)
  11. Quail Eggs - 4-6 (sunny side up)

Instructions

  1. Prepare and Fry Potatoes: Peel and cut potatoes into fries. Drain and dry them thoroughly. Heat oil until burning hot and fry the fries one by one until brown and crispy. Remove and drain on absorbent paper.
  2. Season Fries: While fries are still warm, sprinkle salt and crushed black pepper to taste and toss well. Set aside.
  3. Cook Bacon: Cut Canadian bacon into small bits. Cook in a warm pan in its own fat until golden brown. Remove and place on a woven cloth.
  4. Caramelize Bacon: Add maple syrup to the cooked bacon bits in the pan and quickly cook to caramelize. Remove from heat promptly to avoid burning.
  5. Make Chicken Gravy: Bring 1 cup chicken stock to a boil. Mix 1 tbsp butter and 1 tbsp flour to make beurre manié. Add this cold mixture to the hot stock while whisking on low flame until thickened. Remove from heat and transfer to a jug for easy pouring.
  6. Cook Quail Eggs: Drizzle 2 tsp oil in a pan and cook quail eggs sunny side up. Since eggs are small, they cook quickly. Transfer to a plate.
  7. Assemble Poutine: Place fries on a plate, sprinkle chopped cheddar cheese over them, pour chicken gravy, add caramelized bacon bits, top with quail eggs, and lightly drizzle maple syrup over the entire dish.
