Instructions

  1. Prepare Ingredients: Peel and chop shrimp. Clean and blanch duck offal. Chop onions and coriander. Grate or smash palm sugar for sweet noodles.
  2. Make Noodle Dough: Mix 1 kg rice flour with 100 g refined flour and a pinch of salt. Gradually add boiling water while kneading until the dough is soft and chewy. Use gloves to handle hot dough. Let dough rest.
  3. Cook Offal and Shrimp: Boil duck offal until firm, then drain. Stir-fry onions in coconut oil until fragrant and golden. Add shrimp and stir-fry lightly until just cooked but still tender.
  4. Prepare Sweet Noodles: Cook palm sugar with some water until melted. Season to taste. Prepare sweet noodle dough similarly and cook noodles in boiling water. Drain and top with peanuts and grated dried coconut.
  5. Cook Salty Noodles: Boil noodle dough pieces until they float and are cooked through. Prepare salty noodle soup by stir-frying shrimp and onions with MSG, then add boiled duck offal and coconut milk. Add cooked noodles to soup and garnish with coriander.
  6. Serve: Serve salty noodles hot in soup with offal and shrimp. Serve sweet noodles topped with peanuts and coconut as a dessert or snack.
