Ingredients

  1. sweet potato - 2.5 lbs (about 2 and 1/2 to 3 lbs)
  2. salt - to taste (for boiling water and to taste)
  3. salted cod (saltfish) - to taste (or any affordable salted fish)
  4. onion - 1 (diced)
  5. scallion (green onion) - to taste
  6. butter - 2 tablespoons (a couple tablespoons)
  7. fresh thyme - to taste
  8. garlic - to taste
  9. black pepper - to taste
  10. olive oil - to taste
  11. smoked paprika (optional) - optional (sweet smoked, Spanish Pimentón if available)

Instructions

  1. Prepare Sweet Potatoes: Trim the ends of the sweet potatoes, cut them into large pieces, and boil in salted water until tender, about 15-22 minutes. Drain and let cool, then peel and cut into smaller, bite-sized pieces.
  2. Prepare Salted Cod: Prepare the salted cod by either boiling it to remove most of the salt or soaking it overnight, then flake it, removing any bones.
  3. Fry the Dish: In a medium flame, heat olive oil in a pan. Add butter, diced onion, prepared salted cod, thyme, garlic, black pepper, and scallion. Cook for 3-4 minutes until fragrant. Add the sweet potato pieces and toss to coat in the mixture. Let heat through for another 2 minutes.
  4. Serve: Serve hot as a comforting one-pot dish or as a side. Optional: Add smoked paprika for a smoky, sweet heat flavor.
