Ingredients

  4. spinach - 1/2 pound (blanched, washed, and squeezed)
  5. garlic - to taste
  6. sesame oil - to taste
  7. toasted sesame seeds - to taste
  8. carrot - 1 (thinly sliced into matchsticks)
  9. red bell pepper - 1 (thinly sliced into matchsticks)
  10. zucchini - 1 (sliced into matchsticks)
  11. cucumber - small portion (sliced into matchsticks)
  12. green onion - 1 (chopped)
  13. beef (filet mignon) - small portion (thinly sliced into matchsticks for tartare)
  14. soy sauce - to taste (for beef seasoning)
  15. honey - to taste (for beef seasoning)

Instructions

  1. Prepare soybean sprouts: Boil 12 ounces of soybean sprouts in 4 cups of water with some salt for 20 minutes over medium-high heat without uncovering.
  2. Season spinach: Season blanched, washed, and squeezed spinach with garlic, sesame oil, salt, and toasted sesame seeds.
  3. Prepare vegetables: Slice carrot and red bell pepper into thin matchsticks. Sprinkle with a pinch of salt and set aside to sweat. Do the same with zucchini and cucumber.
  4. Prepare beef: Slice a small portion of filet mignon into thin matchsticks. Season with garlic, soy sauce, honey, and lots of sesame oil.
  5. Assemble bibimbap: In a bowl, place cooked rice as the base. Arrange the prepared vegetables and beef on top. Serve with hot pepper paste on the side for mixing.
