  2. egg yolks - 2 (add 2 egg yolks for smoothness and flavor)
  3. salt - pinch (a pinch, adjust to taste)
  4. alcohol vinegar - watch the video to see (add to taste)
  5. mustard - watch the video to see (add to taste)
  6. black pepper - watch the video to see (add to taste)
  7. oil - watch the video to see (add until desired consistency is reached)

Instructions

  1. Prepare the base: In a blender cup, place one whole egg and two egg yolks.
  2. Add seasonings: Add a pinch of salt, alcohol vinegar, mustard, and black pepper. You can adjust the seasonings later to your taste.
  3. Blend initial mixture: Start blending without adding oil until all ingredients are incorporated.
  4. Add oil and blend: Add the oil directly (no need to add little by little) and blend at low speed until the mixture thickens and emulsifies. Listen for the blender sound to know when it is reaching the right consistency.
  5. Adjust and refrigerate: Do not make the mayonnaise too thick as it will thicken more in the fridge. After blending, taste and adjust seasonings if needed, then refrigerate.
