Ingredients

  1. oil - watch the video to see (any preferred oil)
  2. onion - watch the video to see (finely chopped)
  3. salt - a little
  4. chicken - watch the video to see (with bone or breast/leg meat, cut into pieces)
  5. curry leaves - watch the video to see (optional, for South Indian flavor)
  6. curry powder - 1 tsp (homemade, adjust to taste)
  7. tomato paste or puri - watch the video to see (dilute paste if using)
  8. water - watch the video to see
  9. cream - watch the video to see (optional, for non-Indians)
  10. coriander - watch the video to see (chopped, for garnish)

Instructions

  1. Fry Onions: Heat oil in a pan, add onions and a little salt, and fry until slightly golden.
  2. Add Chicken: Add chicken pieces and optional curry leaves, and fry with the onions for 3 minutes on medium flame.
  3. Add Curry Powder: Stir in the curry powder, then add tomato paste or puri and water. Cover and cook on a slow flame for 15 minutes.
  4. Add Cream: If using cream, temper it with some of the curry before mixing it in to prevent curdling. Bring to a boil.
  5. Garnish and Serve: Add chopped coriander for garnish. Serve the chicken curry hot with roti or rice.
