  3. chicken stock - 1 1/2 cups
  4. heavy cream - 1/2 cup
  5. chipotles in adobo - 1/4 cup
  6. garlic cloves - 3 (minced)
  7. yellow onion - 1 medium (medium dice)
  8. Mexican oregano - 1/2 tsp

  13. white rice or fresh tortillas - watch the video to see (for serving)

Instructions

  1. Season and Sear Chicken: Season the chicken thighs with salt and pepper, then sear them in unsalted butter until golden. Remove from pan.
  2. Sauté Onions and Garlic: In the same pan, sauté the diced onions and minced garlic.
  3. Add Spices and Liquids: Add Mexican oregano, chicken stock, chipotles in adobo, and heavy cream to the pan.
  4. Blend and Simmer: Blend the sauce mixture for a minute before adding it back to the pan along with the seared chicken thighs. Cook for about 45 minutes until the sauce thickens.
  5. Serve: Serve the chicken with white rice or fresh tortillas, garnished with cilantro leaves and a squeeze of lime juice.
