Ingredients

  1. sea bass fillets - 4 (4 fillets)
  2. potatoes - 2 (peeled and thinly sliced)
  3. breadcrumbs - 150 g (for the crust)
  4. Parmesan cheese - 50 g (grated, for the crust)
  5. lemon zest - 1 lemon zest (from 1 lemon)
  6. garlic - 1 clove (1 clove, minced)

  10. extra virgin olive oil - watch the video to see (3 tablespoons for crust plus extra for drizzling)

Instructions

  1. Prepare Potatoes: Peel the potatoes and slice them very thinly using a mandoline. Boil a pot of lightly salted water and cook the potato slices for 5 minutes. Drain the slices.
  2. Make the Crust Mixture: In a bowl, combine breadcrumbs, grated Parmesan, chopped parsley, minced garlic, lemon zest, salt, and pepper. Add 3 tablespoons of extra virgin olive oil and mix well.
  3. Assemble the Dish: Line a baking tray with parchment paper. Arrange the potato slices on the base of the tray, slightly overlapping. Place the sea bass fillets on top of the potatoes.
  4. Apply the Crust: Cover the sea bass fillets entirely with the prepared crust mixture, pressing firmly to create an even coating.
  5. Bake: Drizzle extra virgin olive oil over the entire tray. Bake in a preheated ventilated oven at 180°C (356°F) for about 20 minutes until golden. Optionally, use the grill function for the last 5 minutes for extra crispiness.
