Instructions

  1. Cook the Beef: Heat a pan until hot. Add ground beef and season with salt, pepper, sesame seed oil, and grape seed oil. Stir the beef as it cooks. Add more pepper, chili flakes, minced garlic, and freshly grated ginger. Add dark soy sauce, fish sauce, and sesame oil. Cook until beef is done and crispy. Turn off heat and stir in sliced scallions and sprinkle sesame seeds on top. Set aside.
  2. Prepare the Peanut Sauce: In a separate pan, combine 200 ml coconut milk, two dollops of peanut butter, fish sauce, a touch of dark soy sauce, and a teaspoon of honey. Bring to a boil and whisk well. Add chili flakes to taste. Keep warm.
  3. Make the Quick Pickle: Lightly peel and grate the dikon radish. Sprinkle with a touch of granulated sugar and white wine vinegar. Let it sit to marinate and develop flavor.
  4. Assemble the Lettuce Cups: Take large lettuce leaves and place about three wraps per person. Start by adding a spoonful of the quick pickle at the bottom for crunch, then add peanut sauce, followed by the crispy beef mixture. Top with pickled onions and garnish with carrot for color.
