Ingredients

  1. ribeye steak - 300 grams (about 300 grams, tempered (taken out of refrigerator 20 minutes before cooking))
  2. butter - 1 tablespoon (for cooking and finishing, plus a dab for the grill)
  3. salt - 1 teaspoon (for seasoning the steak)
  4. black pepper - 1 teaspoon (freshly ground, for seasoning the steak)
  5. extra virgin olive oil - 1 tablespoon (to marinate the steak before grilling)
  6. brioche bun - 1 bun (toasted)
  7. heart lettuce - watch the video to see (for the burger)
  8. pommes alumettes - watch the video to see (store-bought or homemade, for serving)
  9. mayonnaise - 2 tablespoons (for steak dressing)
  10. Dijon mustard - 2 teaspoons (for steak dressing)
  11. honey - 1 teaspoon (Japanese honey preferred, for steak dressing)
  12. salt - 1/2 teaspoon (for steak dressing)
  13. lemon juice - 1/2 tablespoon (freshly squeezed, for steak dressing)
  14. fresh dill - 1/2 tablespoon (finely chopped, for steak dressing)
  15. red onion - 1/2 tablespoon (finely chopped, for steak dressing)
  16. garlic - 1 clove (grated or finely minced, for steak dressing)
  17. cayenne pepper - 1/2 teaspoon (for a little warmth in steak dressing)

Instructions

  1. Prepare the Steak: Remove the ribeye steak from the refrigerator at least 20 minutes before cooking to temper it. Season the steak with salt, black pepper, and drizzle with extra virgin olive oil. Massage the seasoning into the steak.
  2. Preheat the Contact Grill: Turn on the contact grill and select the 'steak' function. Choose the desired doneness (rare, medium, well done). For rare, select the pink setting. Wait for the grill to beep indicating it has reached the perfect temperature.
  3. Cook the Steak: Place the steak on the grill, add a small dab of butter on top, and close the grill. Insert a thermometer into the center of the steak to monitor the internal temperature. Cook until the desired temperature is reached (rare is around 45°C internal).
  4. Rest the Steak: Remove the steak from the grill and let it rest for a few minutes to allow juices to redistribute.
  5. Make the Steak Dressing: In a bowl, combine mayonnaise, Dijon mustard, honey, salt, lemon juice, chopped dill, chopped red onion, grated garlic, and cayenne pepper. Mix well and let the dressing sit for 15-20 minutes, preferably overnight, to develop flavors.
  6. Prepare the Burger: Toast the brioche bun on the contact grill. Slice the rested steak thinly across the grain. Assemble the burger by spreading steak dressing on the bun, adding heart lettuce, placing the sliced steak on top, and adding more dressing as desired. Serve with pommes alumettes on the side.
