Marinate: Cover the seasoned mince with cling wrap and refrigerate for a couple of hours to let the flavors develop. For best results, marinate overnight.
Shape Patties: Remove the mince from the fridge. Wet your hands with warm water to prevent sticking. Divide the mince into approximately three equal portions (~170-180g each). Shape each portion into a smooth, even patty.
Coat Patties: Roll each patty gently in a bowl of breadcrumbs, pressing lightly to ensure an even coating.
Prepare Air Fryer: Lightly coat the air fryer basket with oil to prevent sticking. Place the coated patties into the basket, ensuring they are evenly spaced. Lightly spray or brush the tops of the patties with oil.

Assemble Burger: Toast the sesame seed buns. Spread the mustard mayo sauce on both sides of each bun. Add freshly chopped lettuce to the bottom bun, place the cooked chicken patty on top, then cover with the top bun.
