Ingredients

  1. Mangoes - 6-7 (pulp)
  2. Prepared Sugar syrup - ½ cup (for sweetness)
  3. Dry ginger powder - ¼ tsp (for flavor)
  4. Water - 1 cup (for syrup)
  5. Sugar - 2 cups (for syrup)
  6. Remaining mango pulp - watch the video to see (for Fajeto)
  7. Curd - 1 cup (beaten)
  8. Salt - watch the video to see (to taste)
  9. Turmeric powder - ½ tsp (for color)
  10. Gram flour - 1 tbsp (for thickness)
  11. Oil - 1 tbsp (for tadka)
  12. Bay leaf - 1 (for flavor)
  13. Cinnamon stick - ½ inch (for flavor)
  14. Cloves - 2 (for flavor)
  15. Curry leaves - 1 sprig (for flavor)
  16. Button chillies - 4-5 (for heat)
  17. Mustard seeds - ¼ tsp (for tadka)
  18. Cumin seeds - ½ tsp (for tadka)
  19. Jaggery - 1 tbsp (for sweetness)
  20. Ginger - ¼ tsp (peeled & grated)
  21. Yellow moong dal - 2 cups (soaked)
  22. Water - 2-3 cups (for cooking dal)
  23. Asafoetida - a pinch (for flavor)
  24. Degi red chili powder - ½ tsp (for color)
  25. Coriander powder - ½ tsp (for flavor)

  27. Coriander leaves - 1 tbsp (finely chopped for garnish)

Instructions

  1. Prepare Aamras: In a bowl, mix mango pulp and prepared sugar syrup.
  2. Blend Aamras: Transfer to a mixer grinder and grind into a smooth paste.
  3. Add Ginger Powder: Pour into a bowl, add dry ginger powder, and mix well.
  4. Prepare Sugar Syrup: In a saucepan, combine water and sugar, cook for 5-6 minutes until sugar dissolves.
  5. Prepare Fajeto: In a bowl, mix remaining mango pulp, water, curd, salt, turmeric, and gram flour.
  6. Prepare Tadka for Fajeto: In a handi, heat oil, add bay leaf, cinnamon, cloves, curry leaves, button chillies, mustard seeds, and cumin seeds.
  7. Combine Fajeto: Add prepared fajeto, jaggery, and simmer for 10-12 minutes.
  8. Cook Moong Dal: In a pot, combine soaked moong dal, water, salt, and turmeric, simmer until cooked.
  9. Prepare Tadka for Dal: In a pan, heat oil, add asafoetida, red chili powder, coriander powder, and cooked dal, sauté for 4-5 minutes.
  10. Serve: Transfer everything to serving bowls and garnish as desired.
