Ingredients

  1. zucchini - 1.5 kg (1.5 kg)
  2. minced beef - 500 g (500 g)
  3. sweet trahana vlacha - 120 g (120 g)
  4. onion - 1 (small, chopped)
  5. parsley - 1/4 bunch (1/4 bunch, chopped)
  6. dill - 1/4 bunch (1/4 bunch, chopped)
  7. dried oregano - 1 teaspoon (1 teaspoon)
  8. egg - 1 (medium)
  9. olive oil - 2 tablespoons (2 tablespoons)
  10. white wine vinegar - 2 tablespoons (2 tablespoons)
  11. water - 1 liter (1 liter)
  12. vegetable cube - 1 (1)
  13. salt and pepper - to taste (to taste)
  14. egg yolks - 2 (for sauce, 2 medium)
  15. lemon juice - 1 lemon (from 1 lemon)
  16. unsalted butter - 60 g (60 g, for sauce)
  17. all-purpose flour - 60 g (60 g, for sauce)

Instructions

  1. Prepare zucchini: Cut ends off zucchini, halve, and hollow out, saving 150 g of the flesh.
  2. Make the filling: Mix zucchini flesh, onion, parsley, dill, oregano, minced meat, egg, salt, pepper, olive oil, vinegar, and trahana.
  3. Stuff zucchini and cook: Fill zucchini with mixture, place in a saucepan, add water, vegetable cube, and olive oil. Cover and cook for 35 minutes.
  4. Prepare sauce: Make a béchamel sauce using the juice from the cooked zucchini, butter, flour, lemon juice, and egg yolks. Pour over cooked zucchini.
