  2. water - 200g
  3. cinnamon stick - 1
  4. orange peels - from 1 orange
  5. glucose - 1 tablespoon
  6. tsoureki - 200g (for the base)
  7. strained yogurt (Fage Total 5%) - 400g
  8. mahlepi - 1/2 teaspoon
  9. mastic powder - 1/4 teaspoon
  10. icing sugar - 80g
  11. heavy cream (35%) - 200g
  12. orange zest - from 1 orange
  13. chopped pistachios - watch the video to see (for serving)

Instructions

  1. Prepare the Syrup: Combine sugar, water, cinnamon, orange peels, and glucose in a saucepan. Bring to a boil and let cool.
  2. Prepare the Tsoureki Base: Cut the tsoureki into slices, dehydrate in the oven until crispy, then soak in the prepared syrup.
  3. Prepare the Cream: Mix yogurt, mahlepi, mastic powder, icing sugar, heavy cream, and orange zest until fluffy.
  4. Assemble: Spread the cream mixture over the soaked tsoureki base. Refrigerate until set.
  5. Serve: Cut into pieces and serve with chopped pistachios.
